My wife and I had a truly delicious lunch at Sanaa. We mentioned the gluten allergy when checking in for our ADR. They have a separate gluten-free menu and a chef came out and reassured us that he took allergies very seriously and no gluten contamination would occur.
We had the gluten-free version of the bread service and all but one of the dips are safe. The tamarind dip has gluten. I would ask them to bring out that dip on a separate plate since their default is to put them all on the same plate. There were spoon for the dips so avoiding cross contamination was easy.
We had the goan fish curry, butter chicken, and vegetarian platter….all delicious. No reactions.

I am glad your expereince was good. Beware: my son had a terrible anaphylactic reaction there when they had added butter to his meal after we went through the discussions about his dairy allergy.
